Sea Snail and Maitake Mushroom Fricassee


  • 200g of sea snail
    100g of maitake mushrooms
    80g of fresh cream
    5g of parsley
    10g of blue cheese
  • ▼ Seasoning

    15g of unsalted butter
    salt and pepper

    Slice the sea snail and crumble the maitake mushroom.

    Add the butter to a frying pan and sauté the maitake mushrooms.

    Add the fresh cream.
  4. 4

    Once the mixture thickens, add the blue cheese, sea snail, and parsley, in that order, and turn off the heat.
  5. 5

    Place on a plate and sprinkle with black pepper.


Stir slowly once the fresh cream is added to reduce the mixture.
