Sautéed Pacific Saury in Olive Sauce


  • 4 Pacific saury
    40g of green olives
    20g of capers
    5g of parsley
    10g of garlic
    10g of anchovies
  • ▼ Seasoning

    2 bay leaves
    olive oil
    20cc of lemon juice

    Remove the head and innards of the Pacific saury, cut off the tail and cut the body in half. Season in salt and pepper.

    Coat a frying pan in olive oil and sauté the Pacific saury pieces.

    Cut the olives, caper, anchovies and parsley into tiny pieces.
  4. 4

    Add the sliced garlic, bay leaves, and olive oil into a pot and heat until the garlic changes color slightly.

    Add the ingredients from Step 3 as well as the lemon juice.

    Plate the Pacific saury and cover in sauce.


Cook both sides of the Pacific saury well using medium heat.
