Oysters au Gratin


  • 80g of oysters, removed from shells
    ½ of an onion
    ½ tablespoon of butter
  • ▼ Sauce

    4 tablespoons of butter 4 tablespoons of soft flour 1 cup of milk salt and pepper - to season
  • ▼ Season

    1 tablespoon of breadcrumbs 1 tablespoon of butter
  • ▼ parsley

    Wash oysters in salt water, and blanch in boiling salted water. (Salt for boiling water is not included in the ingredient list.)

    Strain simmering liquid from step 1, and reserve.
  3. 3

    Thinly slice onions, and saute in butter until soft.
  4. 4

    In another pot, melt butter for sauce, and flour in hot butter.
  5. 5

    Little by little, stir in milk and two tablespoons of the oyster simmering liquid to create a sauce. Season with salt and pepper.

    Add oysters and onions to sauce from step 5, and mix well.

    Butter gratin dishes. (This butter is not included in the ingredient list.)

    Transfer mixture from step 6 into gratin dishes.

    Sprinkle with breadcrumbs, and top with pieces of butter.

    Bake for 15-20 minutes in a 200°C oven. Garnish with minced parsley and serve.

To make a smooth sauce, slowly stir in milk and simmering liquid little by little, then continuously stir as you heat the sauce.
