Ohagi Three Ways (Rice Balls Covered with Sweet Paste)

材料(2人分)

  • 2 cups of glutinous rice 2 cups of water
  • ▼ Edamame Bean Paste

    150g of edamame
    (green soybeans), boiled and shelled
    60g of sugar
    Salt - to taste
  • ▼ Sesame Paste

    50g of white sesame
    2.5 tablespoons of sugar
    2 teaspoons of mirin
    Salt - to taste
  • ▼ 150g of koshian(smooth red bean paste)

作り方

    Rinse the glutinous rice, and leave to soak in plenty of cold water for two hours. Drain in a sieve, and cook in 2 cups water.

    Transfer the cooked rice into a suribachi (ridged earthenware mortar). While still warm, crush about half the rice grains.

    Moisten hands with water and shape rice into balls of preferred size.

    Remove the membranes from edamame, and grind well in the suribachi. Stir in sugar and salt.

    Continue grinding the edamame bean paste until smooth.
    Toast white sesame seeds in a dry saute pan.

    Thoroughly grind the toasted sesame seeds from step 6 in the suribachi. Mix in sugar, mirin, and salt.

    Moisten a cotton cloth and wring well. Spread edamame bean paste over the cloth.

    Place a rice ball from step 3 into the center of the bean paste, and wrap the paste around the rice ball. Use the same procedure for koshian.

    For sesame rice balls, dredge the rice balls with sesame paste to coat evenly.

料理のコツ・ポイント

When making the edamame bean paste, remove the fine membrane around each edamame bean.
